Tuesday dinner

Dinner tonight was California Zucchini Bake. Ingredients:

I browned the meat with the onions and zucchini and then added the spices, sour cream, cheese and cooked rice. Before oven:

I was actually surprised that I owned a 2 quart baking dish. ha ha.

After oven:


Outcome: The meat needed more seasoning during the browning phase. Salt? More onions? The tomatoes added a great punch of flavor and I think I would add a few more next time so the top is good and covered. I'm happy with the turnout. I'm enjoying it right now. :)

Oh and I went to Zumba class tonight at the gym. White women cannot shake it like those latino women. I was awkward and nerdy. I think next time I should have a couple shots before I go in. kidding, kidding.
