another day of cooking

I'm leaving Tuesday for California for the rest of the week so I figured I needed to get a good start on my New Years goal. So watch out - today I made two things. wowzers.

Laurel introduced me to Chutney while visiting her in November. Chutney is like a jam but is sweet and sour. But chutney can't be found in standard supermarkets and I happened to pick this stuff up in Denver one weekend at a specialty store. Oh, and not only did Laurel introduce me to chutney, it was chutney and grilled cheese sandwiches to be specific. (Did I say chutney a lot?). I had some muenster cheese in my fridge so put the two together today for lunch. yum. yum. yum! Seriously. It makes a plain old grilled cheese sandwich one of my favorite meals.

And meal #2 was beef minestrone crockpot soup. Crockpot cooking really is my favorite thing. It takes little time and it is hard to over-cook (aka ruin it). Here are the first round of ingredients minus the stock (spaced it when taking picture). I threw this all in the crockpot before church this morning and let it cook for 7 hours.

At 7 hours I added chopped zucchini, chopped cabbage and elbow noodles. 45 minutes later and I had this...

Add a little parmesan cheese to top it off and deliciouso. Soup usually freezes well so I'll have meals for a few days.

I realized the big learning curve in cooking will be to take leftover ingredients to make something else tasty. Right now I have a half a head of cabbage. Use it or waste it? Hmmmm. I'll keep you posted.

Southern California?!?!?, he asks hopefully. I'll totally buy you a brew if you're in town ... or let you cook for me. Either way.

PS. I buy cheese at Fresh/Easy, too. Wahoo!

Yum...that looks good!! I'm very proud of you for cooking...I hate cooking. Especially coming up with what to cook. P.s check back like 4 posts ago...I commented haha.

congrats on cooking! Our new years resolution is adding veggies to our diets at least 4 times a week. Good luck!!

One of our favorite things to do with cabbage (actually it's the only thing) is to make cabbage burgers. Chop the cabbage, add browned ground beef with chopped onion, mix them together with lots of salt and pepper, let it cook in a covered pot until the cabbage is done, then put it in a bun. I eat it open face and add ketchup to it. Yummy! Most people say it sounds weird but like it once they try it. Just an idea for those left overs.
