Sunday dinner

Remember my cooking resolution? I actually have been doing pretty well. EW and I cooked at home all last weekend although we didn't take any pictures cause it wasn't anything new that we haven't done before. I have to say, it is amazing how many leftovers I have and I love it! Soups and muffins both freeze really well. Its delightful. I just steam up some veggies with the soups and dinner is served or I take a muffin with a piece of fruit for breakfast to work and its ever so yummy. I think I can do this. I think I'm doing this.

For tonight, I found a recipe for Chicken Tortilla Soup. So I gave it a go. If you saw my previous post from today, yes I still have loads of work to do but I had to stop and eat, right?

Here we go...

I took the picture of ingredients after I threw the chicken in the pot. Oops. So ingredients included everything here plus a large chopped onion, and 4 chicken breasts. See the light sour cream and reduced sodium chicken broth? Every bit of effort helps toward good health. :)

Chicken broth, chicken, chopped onion and torn corn tortillas into the pot they go to cook for one hour.
After one hour, I pulled the chicken out and shredded it. It was fun shredding.

Then back into the pot with the rest of the ingredients for 10 minutes and Wah-La... Dinner.

I have to admit I have horrible knives so chopping the cilantro was a bit tricky hence the large pieces. But the soup was delightful and I have 3 containers in the freezer. Bon Apetit.
